Strawberry Arugula Salad with Balsamic Fig Dressing

Omigoodness! Any day you find organic strawberries is a very, very, very (berry) good day! (Even better when they’re $1.99 a box—SCORE!) Please don’t eat strawberries if you don’t know their status (conventional vs organic) or the pest control practices of the farms from which they come. They top the list of pesticide-laced fruits and veggies and “laced” is too dainty a word to use for a berry that boasts at least 20 pesticides!

This is light, slightly sweet, a little salty and packs a punch of of summer flavors!

INGREDIENTS

  • 4 cups organic arugula

  • 10 organic strawberries (or more . . . just go for it!)

  • 2 T roasted and salted pumpkin seeds

  • 2 T chopped walnuts

  • 1 t dried onion

  • 3 T extra virgin olive oil

  • 1 T balsamic fig vinegar

  • 4 T favorite dried fruit, chopped, ie figs, apricots (I used Turkish apricots)

  • Salt and pepper to taste

INSTRUCTIONS

  • Mix together olive oil, vinegar and dried onion. Set aside.

  • Slice strawberries. Mix in with arugula, pumpkin seeds, walnuts and dried fruit. Use dressing at your discretion. Salt and pepper to taste. Enjoy!

YIELDS: 2 servings
